Today I was looking for an Unforgettable dessert to have with supper. It seems we always tend to make the same old things and then wish we had tried something new.
We had homemade chili for supper and I wanted a dessert that was light, but not too sweet yet something I could have a glass of wine with. I started looking in my old recipes and I came up with an Unforgettable dessert I haven’t made for years.
I saw the recipe and immediately knew it was something I wanted to make. It is light, not too sweet and yet very satisfying. (Looks delicious doesn’t it?)
What is it? It is my recipe for Tiramisu!
It is a great recipe and it serves 9. (I’ve even used it when I was on weight watchers and it uses 12 1/2 points. That may seem like a lot but it is definitely worth it.)
Ingredients Needed:
- 3/4 cup sugar
- 6 egg yolks
- 3/4 cup whole milk
- mascarpone cheese, 4 – 8oz containers, at room temperature
- 1/2 cup brandy or cognac
- 1 1/2 cups strong coffee or espresso, at room temperature
- 30 or 32 crisp ladyfingers (Italian)
- 1/4 cup cocoa powder
- bittersweet chocolate, for shaving (optional)
Directions:
Using an 8-inch square baking dish, line with plastic wrap, leaving a 3-inch overhang on all sides.
Fill a large bowl with ice water
Custard:
Mix egg yolks and sugar well, then put into a double boiler. Add enough water underneath to simmer the water but not high enough to touch the pan containing the custard mix. Whisk until the sugar dissolves and then add the milk, a little at a time, whisking constantly. Continue for about 10 minutes, the custard will be light and foamy.
Remove the top from the double boiler and set in the bowl of ice water you have set aside. Whisk for about 1 minute, or until custard is cool.
Put the mascarpone in a large bowl and fold the custard into it with a rubber spatula, until almost combined and then whisk just until smooth.
Combine the coffee and brandy in a shallow bowl. Dip the ladyfingers into the mixture until soaked but not soggy. Arrange 2 rows of about 5 ladyfingers each in the baking dish. Spread 1/3 of the mascarpone custard over the ladyfingers. Repeat with a second layer of the ladyfingers, arranging them in the opposite direction as the first layer. Top with 1/3 of the custard. Repeat the ladyfinger layer once again, changing direction. Spread the remaining custard on the top and then dust with cocoa powder.
Cover dessert with the overhanging plastic wrap that you lined this pan with and refrigerate for at least 4 hours or overnight.
Next, you come to the fun part! Pull the plastic wrap from the top of the pan and invert a plate on top of the tiramisu, then flip onto the plate. Invert a fancy plate or a serving plate on top of the tiramisu and flip again. Remove the baking dish and plastic wrap. The cocoa side is up. Shave some bittersweet chocolate on the top with a vegetable peeler and your dessert is just about ready.
Pick your favorite fine wine, (I prefer a chardonnay, but that is your choice.
Serve the fine wine, with an Unforgettable Dessert, Tiramisu, and just sit back and relax. It doesn’t get much better …
